Using monochloroacetic acid to replace the hydroxyl groups of glucose, O-3, or O6, cellulose is dissolved in alkali to form carboxymethyl cellulose (CMC), a derivative of cellulose made of derived glucose linked by (β-(1, 4) glycosidic linkages. Sodium carboxymethyl cellulose, carboxymethyl cellulose (CMC, cellulose gum) Treat foods like ice cream, beer, pie fillings and jellies, cake icing, and nutritional supplements to improve texture, stabilize foam, keep fruit from settling, and keep sugar from crystallizing (cake icing). Foods and cosmetics contain carboxymethyl cellulose sodium as a thickener or viscosity modifier. Emulsion stabilizer is also used to manufacture paper, paints with water bases, and medicated eye drops (artificial tears).
