Yogurt is food produced from fermentation of milk by bacteria. Yogurt is also known by the names such as joghourt, yahourth, yoghurt, etc. These bacteria are known as yogurt cultures. The fermentation of milk by these bacteria produces lactic acid which provide texture and tart taste to the yogurt. It is rich in various nutrients such as calcium, proteins, zinc, potassium, vitamin B12, vitamin B2, and phosphorus which are highly beneficial for health. The various health benefits of the yogurt are protecting against colorectal cancer, maintaining blood pressure, improving immunity, lowering the risk of type 2 diabetes.
Some types of yogurts contain probiotics, which helps in maintaining digestive health and reduces gastrointestinal disorders, such as bloating, diarrhea and constipation. Yogurt is similar to curd but the one key difference is that the fermentation of the milk is done by mixing two specific strains of bacteria called Lactobacillus Bulgaris and Streptococcus Thermophilus. Greek yogurt contains double protein as compared to curd.
