Gelatin has unique features that make it particularly useful as a gelling agent, emulsifier, binder, or thickener. The most common forms of gelatin are manufactured from bovine bone, porcine skin, and bovine hide. Gelatin contains a unique amino acid arrangement in its sequence and has comparatively high amount of proline, glycine, and alsnine. The presence of biologically active peptide sequences in its primary structure results in gelatin’s bioactivities.
Global Food Grade Gelatin Market Drivers & Restraints
Increasing Demand of Gelatin as A Food additive
Gelatin is used widely in food applications due to its remarkable functional properties. It can function as a gel, a whipping agent to foam and aerate, a protective colloid, a binding agent, a film former, a thickener, a processing aid, an emulsifier, a stabilizer or as an adhesive. In some applications, several of these functions are called upon together, and hence, gelatin defines its wide use as an ingredient in the functional foods industry. There are jellied meat products of many kinds. For instance, gelatin used in gel aspics, glazed, and canned meats. Its main function is to absorb meat juices and give form and structure to products that would otherwise fall apart.
