Cider Market Overview

Introduction:

Cider is a low-concentration alcoholic beverage made from fermented fruit juices. Apples are used to make cider, also known as hard-cider. The alcohol concentration of cider ranges from 1.2% ABV (alcohol by volume) to 8.5% ABV. To give the product its specific taste, specific apples are grown to produce the cider drink. Perry is a cider-like product made from fermented pear juice. Because of the fruit content in cider, it provides vitamin-C and antioxidants when consumed that help reduce the risk of heart disease and asthma. A recent trend in brew pubs and bars, the health benefits of cider drinks has boosted sales of cider. In cider making, the apples are ground into a fine pulp, or pomace, and then pressed, for hard cider, the extracted juice is conveyed directly into fermentation vats or bags. If the fermented cider is to be sweet, the juice must be filtered at an early stage to retain the desired percentage of fermentable sugar, if a dry cider is desired, the fermentation must be carried out until all or most of the sugar is converted.
