- Biological Methods: These involve using microorganisms, typically certain strains of yeasts or bacteria, such as Candida tropicalis or Pichia stipites to convert xylose into xylitol through fermentation under controlled conditions. Low oxygen levels are crucial in this process to direct the metabolic pathway toward xylitol production. Enzymatic conversion using isolated enzymes such as xylose reductase has been explored, it remains largely at the lab scale due to high enzyme costs and lower stability.
