Nisin is a mixture of natural antimicrobial polypeptides produced by lactococcus lactis which are food preservative. Lactis can be digested into amino acids by protease in the stomach and human intestines, it consists of 34 amino acid residues with some uncommon amino acids like lanthionine (Lan), didehydroalanine (Dha), and didehydroaminobutyric acid (Dhb).
